The latest Center Parcs family blogger challenge is based on chocolate. Excellent! We decided to make some family treats for Easter together. Both children were very enthusiastic. Once I had prepared the kitchen for the mess, I was also looking forward to it!
We made our own take on a Rocky Road. We put in cornflakes, marshmallows, raisins, cranberries and a bit of mango. Both children delighted in eating stirring the mixture. I melted a combination of plain and milk chocolate and we drizzled it over the mixture.
Recipe
Cornflakes 6 cups
Mini marshmallows 1 cup
Raisins 1/3 cup
Mango 1/3 cup
Cranberries 1/3 cup
150g chocolate melted
1 pack chocolate mini eggs
We melted the chocolate in a bowl over a pan of hot water. While it was melting, we put all the remaining ingredients in a big mixing bowl and stirred them all up. Some eating of ingredients happened at this point (not by me I hasten to add). Then, when all the chocolate had melted, we added that to the mixture. At this point, you might need to add extra cornflakes. Make sure that all the cornflakes are covered in chocolate and then spoon into cases. Leave somewhere cold (not hard at the moment) whilst they set.
