Richmond mini meatball kebabs

We were recently set a challenge to create a recipe from Richmond mini meatballs. I have never bought meatballs for the children before although they have eaten them in restaurants and at my Grandma's.


I was quite impressed at the quality of the pork meatballs. They are a great size for children too.


I thought I would keep things simple and, given that the weather has been so beautiful and warm recently, I opted for kebabs. This was another first for the children but worked really well. They loved that they could hold the stick and eat off it! I served them with rice to bulk out the meal but you could also serve it with couscous or potatoes.


What you need
1 pack Richmond mini-meatballs
Vegetables (we used tomatoes, onions, peppers and parsnips)
Kebab sticks
Rice

This takes approximately five minutes to prepare. So simple but so effective.
Pop the rice on first.
Then put the vegetables and meatballs on the kebab stick
Cook either under the grill, on a barbecue or, as we did, on a George Foreman grill.
Cook for ten minutes and make sure you turn them regularly.
Serve with the rice.

I will definitely buy these again. Both children wolfed their food down (give or take a few vegetables).
